Which format to pick
MiniMessage is the format of the Adventure library that Paper is built on: <gradient:#ff0000:#0000ff>text</gradient>. If your plugin understands it, it's the shortest option — the plugin works out the colours itself.
&#RRGGBB and &x codes put a colour on every letter. Plugins that handle colour codes with & understand them. The line gets long: every letter has its own code.
JSON is a text component for /tellraw, /title and signs: for example, /tellraw @a followed by the generator's line.

Can I put a gradient in a player's name?
Yes, if your nickname or prefix plugin supports hex colours. Pick the format its docs name — most often MiniMessage or &#RRGGBB.
Why didn't the code work and I see symbols?
The plugin doesn't understand that format. Try another one from the generator or check your plugin's docs for the colour format it expects.
Do hex colours work in the MOTD from server.properties?
No, server.properties understands only the 16 standard colours. Gradient MOTDs come from plugins with MiniMessage.
How many colours can I use?
Two or three: the generator blends smoothly from the first colour to the second and on to the third.
